In a bowl, combine and mix pork, salt, and black pepper. Set aside for 10 minutes.
In another bowl, scramble the eggs with an egg beater then set aside. Get another bowl or flat plate and pour-in the flour. Set aside.
Then, heat oil in a pan. Fry the pork one by one and dip into the egg and roll in the flour.
In the same pan, fry the coated pork until golden brown. Set aside.
Sweet and Sour Sauce
In a pan, combine water, ketchup, vinegar, brown sugar, and the remaining salt and pepper. Mix well before heating the pan.
Then, cover the pan and bring to boil. Lower the heat when it's boiling already.
Toss in the carrots, bell pepper, and onions. Cook for 3-5 minutes.
Pour in the diluted cornstarch and mix continuously until the sauce gets thick.
Add the fried pork on the pan over low heat and mix well.
