Instructions
Rub salt and pepper over the chicken. Let it sit for 15 minutes.
Then in a casserole, put the chicken, onion, tomato, coconut juice, and young coconut meat. Turn the heat on. Cover and let it boil for about 30 minutes.
Put-in the potatoes and lemongrass then wait for 10 minutes until it boils again.
Pour the chicken broth and Baguio leeks and simmer for another 3-5 minutes.
