In a bowl, season shrimp with salt, pepper and calamansi extract. Refrigerate for 10 minutes. Set aside.
Pour flour in a large bowl and combine with beaten egg, salt and pepper.
Add water and mix well. Set aside.Note: You can add more water if the mixture is too thick. Heat oil in a pot.
Once the oil is hot, dip the shrimp in the batter mixture. Gently drop on the pot then deep fry for 2 minutes. Roll the shrimp over and continue to deep fry for 1 minute.
Remove from the pot and place in a plate over paper tissue.
Eat with your favorite dip.
