Fry the tofu until color turns golden brown then set aside.
Remove some oil from the pan then saute garlic until brown.
Add the onion and shrimp. Season with salt and pepper. Stir well and cook for 3-5 minutes.
Pour-in the shrimp stock. Add the fried tofu and carrots and cook for another 5 minutes.
Add the bean sprouts then cover and cook for about 5 minutes.
Serve while hot! Enjoy.
