Heat oil in a pot over medium heat.
Saute onions, ginger, and garlic until softened and aromatic.
Put in chicken and cook. Stir occasionally for about 5 to 7 minutes or until chicken starts to change color and produce juices.
Then add fish sauce and cook, stir occasionally for about 1 to 2 minutes.
Pour water and bring to a boil, remove scum that floats on top. Cover and simmer for about 30 to 35 minutes or until chicken is cooked over low heat.
Put in papaya or chayote and cook for about 3 to 5 minutes or until tender.
Sprinkle with salt and pepper to taste.
Add chili leaves and simmer for the last 1-2 minutes.
