Ingredients

  • 1 tablespoon Cooking oil
  • 1 pc White onion white, peeled and sliced thinly
  • 2-3 cloves Garlic peeled and minced
  • 4 thumbs Ginger peeled and julienned
  • 1 kl Chicken cut into serving pieces
  • 3 tablespoon Fish sauce
  • 1 L Water
  • 1 pc Green papaya or chayote Small, pared, seeded and cut into 2-inch wedges
  • 1 cup Chili leaves or Malungay
  • 2 pcs Lemongrass leaves
  • Salt and pepper to taste

Instructions

  • Heat oil in a pot over medium heat. 
  • Saute onions, ginger, and garlic until softened and aromatic.
  • Put in chicken and cook. Stir occasionally for about 5 to 7 minutes or until chicken starts to change color and produce juices.
  • Then add fish sauce and cook, stir occasionally for about 1 to 2 minutes.
  • Pour water and bring to a boil, remove scum that floats on top. Cover and simmer for about 30 to 35 minutes or until chicken is cooked over low heat.
  • Put in papaya or chayote and cook for about 3 to 5 minutes or until tender.
  • Sprinkle with salt and pepper to taste.
  • Add chili leaves and simmer for the last 1-2 minutes.
  • Serve while hot. Share and enjoy!
