Ingredients
2tablespoonVegetable Oil
1lbPork heartboiled for 20 minutes and diced
1lbPork lungsboiled for 20 minutes and diced
½lbRadishfinely chopped, press and remove the juice
½lbCarrotsdiced
1cupLiver spread
7clovesGarlicminced
1pcRed onionlarge, minced
4pcsBay leaves
1pcBell pepperlarge, finely diced
1tablespoonAnnatto seeds (Achuete)dissolved in ⅛ cup hot water
2stalksLemongrass (tanglad)
1cupVinegar
1cupWater
1-2teaspoonFish Sauce (patis)
Salt and pepper to taste
Instructions
Heat oil in a pan, sauté garlic and onions.
Add the diced pork lungs and heart and pour in vinegar and water. Simmer for at least 10-15 minutes.
Add carrots. Cook for at least 1-2 minutes. Then, add radish and cook for another 1-2 minutes.
Put in bell pepper, bay leaves, bring to a boil and simmer on high heat until sauce is already thick.
Add liver spread. Stir. Mix well.
Pour annatto mixture then season with fish sauce and ground black pepper.
Simmer for 2 minutes then transfer onto a serving plate.
