Basting mix
3tablespoonAnnatto oil atsuete oil
½cupMargarinesoftened

Instructions
For Marinating
Put and combine chicken, lemongrass, salt, ground black pepper, ginger, garlic, brown sugar, vinegar, lemon-lime soda, and lemon juice In a resealable bag or large bowl.
Stir or shake until ingredients are well mixed. Refrigerate for 1 to 3 hours.
For Basting
For the basting, put margarine, annatto oil, salt and lemon or calamansi juice in a separate bowl. Then, stir. Set aside.
Grilling
Light the charcoal and wait until embers appear on the charcoal.
Grill the chicken for 20 minutes or until well done and baste generous amount of the basting sauce.
Transfer the grilled chicken onto a serving plate.
