Use a large boiling pot, pour water. Bring to boil.
Put all the beef tripes ingredients—cover and cook on medium heat for 30 minutes.
Remove the water, replace with rice wash in the pot. Bring to boil.
Add salt, peppercorn, garlic powder, onion, chili, Lemongrass, and add annatto paste. Then, stir.
Please put in beef bouillon—simmer over low heat for 4 hours. Add water if needed.
Get the tripes, and slice them into small serving pieces.
Please put them in a bowl. Top with spring onion and chili.
Serve with a dipping sauce, chopped onion, soy sauce, Calamansi, and chili.
