In a bowl, combine the pork leg, soy sauce and calamansi juice (extracted). Then, marinate for at least 1 hour. Set aside.
Heat oil in a pan.
Sauté garlic and onions. Then add the marinated pork. Stir. Cover and cook for 5-7 minutes.
Add the dried bay leaves, tomato sauce, and water. Simmer for 30 minutes to 1 hour or until the pork is tender.
Sprinkle the pepper. You can add salt if needed.
Put the carrots, hotdogs and potatoes. Stir and cook for 8-12 minutes.
Then, add the pig liver. Stir. Cook for another 5 minutes.
Serve while hot. Tip: Best served with a hot cup of rice.
