¼cupCurry Powder
1cupCoconut milk
½cupFlour
1cupWater
½teaspoonGround black pepper
¼teaspoonSalt
Instructions
Cover the cream dory with flour. Make sure to coat it well. Set aside.
Then heat oil in a pan. Once the oil is hot, fry the fish over low medium heat until brown. Remove from the pan after frying and transfer in a plate. Set aside.
In another pan, use small amount of the previous oil and saute garlic, onion, tomatoes and ginger.
Add curry powder, water and coconut milk. Then season with salt and pepper. Stir well to avoid curdling of the coconut milk.
Once boiling, put-in the fried fish in the pan and simmer for another 5 minutes.
