What Is Pork Giniling Guisado?
We would probably find no Filipino who would contend that the recipe we’re talking about is one of the Philippines' favorites and finest dishes. Any volunteers? We will surely agree with that! But first, what is this dish? This giniling dish uses pork as its main ingredient. It is a Spanish term that means braising or stewing meat with tomatoes, garlic, onions, and soy sauce. It may look easy to make this dish, but timing is everything. It would help if you were careful as it is crucial to check how much time it has already been heated as it will affect its total time preparation.
Different Variants of Sauteed Pig’s Meat Giniling
Just like every dish that Filipinos enjoy, this dish also has its own varieties. Just a reminder that each variant’s preparation is not the same total time as the dish we’re talking about. It's not always as constant as almost 1 hour. Different variations have a difference, indeed.
With Egg Variant
Of course, it is the one that dominates each of everyone’s table, the one with Eggs. The thing with the quail egg variety is it really looks tempting because of the tiny blob-like eggs that float throughout the dish.
Having the usual chicken boiled egg in this dish is enough for a true heavy meal, but having small eggs with the dish and supplied generously by our trusty quails. It makes this dish more tempting in every bite.
Chicken Variant with Green Peas
If you prefer chicken over another, just change your meat to chicken and add green peas. It will not have a significant change in your recipe after all. You can just go back to making its famous variant if you didn’t like the outcome of the chicken option. The perfect catch here is you can judge which one is better or if they are just equal and both pleasant in your taste.
Beefless Ground (Vegan Alternative)
Ground meat, raisins, olives, and other ingredients that vary by region are the main elements of cooking 'picadillo'. You may be thinking, "Huh? Picadillo? I thought we were talking about giniling?" Yes, picadillo. Giniling was actually a Filipino version of Picadillo, a Spanish and Latin American ground beef hash.Beef hash? Who also craves for corn beef? With beefless ground that you can find in the supermarket or even online markets, you can make a vegan version of this dish. Add it with some twist of ingredients that can satisfy your cravings. This different version can be tweaked a little but we think that the vibe, aroma, and taste will still be there. It is still a great recipe, though. Troubleshooting that can be done in a few minutes
Aside from being armed to the teeth with the knowledge about the ingredients of this dish and step by step process, an exceptional chef also prepares an arsenal of ‘troubleshooting skills’ ready to be deployed when unexpected things happen on their beloved dish.
Here are the common mistakes that people make when making this classic Filipino favorite and pick. Here are the proper fixes you should do with them! Read on, Mr. and Ms. Troubleshooters!
What if it is too salty?
An oversalted food is not just unhealthy; it also tastes awful. If your dish turns out to be too salty, one of the perfect ways to fix it is to double or triple the recipe, without adding any salt!
Doubling or tripling your recipe will make your dish keep up with its own over saltiness, balancing the dish's overall taste again. Saved!
But to prevent over saltiness in your dish in the first place, make sure that only a little amount of salt is added as you prepare. Little by little and don’t pressure yourself. It is better to be safe than sorry, right? You should taste test the dish with every addition of salt.
Too little salt is okay because you can always add some, but the trouble begins when too much salt is sprinkled onto what you are making because you cannot take the excess away.
What if the stew was burnt?
One of the common mistakes that people make when making this dish is forgetting to constantly stir their stew. Sounds like a tongue twister, huh? Just kidding. Let's continue. As a result of not constantly stirring, the bottom of their pan starts to burn and turns black. It is not pleasant in the eyes, of course! And also to what you are trying to make.
When this happens, quickly remove the stew above the burnt part. Be careful not to scrape up the black parts while pouring what you are making into another pot.
These black pieces of stuff you see at the bottom of your pot are carcinogenic, which are bad for your health. Be careful not to include these kinds of stuff on your next pot.
What if you add the ingredients in the wrong order?
A great recipe’s step by step process is there for a reason – and it’s because of the flavor development.
Now you know that these arrangements have purpose, You should never neglect each step in a recipe, and these steps must be strictly followed. What you are following are not just mere orders but the desired flavor development of the recipe.
Complete ingredients are not enough; chefs must keep in mind to follow a recipe’s step by step process. By not following the proper procedure, you’ll distort the desired taste that the recipe is aiming for.

TIP #1 WHY DON’T YOU USE FRESH VEGETABLES?
Don’t use not fresh produce. In terms of produce, using fresh , instead of the traditional tomato sauce “in tetra packs,” you can give your dish a sauce with a thin and light texture, and not to mention, a healthier dose of vitamins! Avoid using rotten tomatoes; it will become soggy when heated and ruin the overall dish. Moreover, it will also lessen total time preparation given that flesh is firm.
